Tricolour Pulao
Ingredients for Orange Rice – Rice 1Cup for all colour rice
Chopped Onion – 1
Tomato – puree of 2-3 tomatoes
Red Chilly Powder – 1 tsp
Garam Masala – 1/2 tsp
Oil – 1 tbsp
Mustard seeds – 1/2 tsp

Ingredients for White Rice– Mustard Seeds – 1/2 tsp
Channa Dal – 1 tbsp
Urad dal – 1 tbsp
Grated Coconut – 3 tbsp
Oil- 1 tsp

Ingredients for Green Rice– Coriander Leaves (Cilantro) – 4 sprigs
Green Chili – 1
Cashew nuts (or coconut) – 1 tbsp
Oil – 1 tbsp
Mustard seeds – 1/2 tsp
Urad dal – 1 tsp
Method
Wash and cook the basmati 1 cup rice. Spread rice and keep aside for cool it in a tray.




Preparation of Orange Rice

In a pan heat oil and pop mustard seeds in it.
Add the chopped onions and saute for couple of minutes. Add the tomato puree, red chilly powder, salt and garam masala.
Cook till oil separates from the masala.
Take 1/3rd of the cooked rice and toss with the masala.
Check for seasonings and switch off.

Preparation of White Rice– In a pan heat oil and pop mustard seeds in it.
In it add and fry channa dal and urad dal till it turns golden brown on low flame.Now add the grated coconut and roast it for 30sec. Put salt, another seco do part of the rice and mix together. Switch off the flame.




Preparation of Green Rice- Take the coriander leaves, green chili, cashews in a mixie or blender. Make a smooth paste with required water.In a pan add ghee and splutter the mustard seeds.
Fry the urad dal and then add the ground paste, saute it for few minutes till the raw smell is gone.
Add salt and mix in the remaining rice.

Last step is to arrange the rice in tricolour flag order. One can serve it with blended curd.
