Tricolour Sabudana Kichadi

Ingredients

Sabudana – 1 ½ cups
Boiled Potatoes 2 medium size
2 chopped green chilies
Curry leaves
Chopped coriander leaves
3tsp Roasted peanut powder
Red chili powder – 1 tsp
Ghee – 3 tbsp
Oil – 3 tbsp
Lemon juice 2tsp
Cumin seeds – 1 tbsp
Asafoetida (hing) powder – ¼ tsp
Salt, sugar – as required




Preparation method

Divide and soak each half cup of sabudana in three vessels overnight.
In one vessel add the green color and remaining both keep white.
Next day, you can see the pearls nicely soaked in water.

For green layer

In a pan, add 1 tsp oil and 1 tsp ghee. When it becomes hot, add little cumin seeds, hing powder, curry leaves, chopped green chili.
Then add the 1/3 chopped potatoes and saute for another two minutes.
Add green sabudana, mix well. Add 2 tsp roasted peanut powder, salt and sugar as required and mix well .
Add lime juice, mix well and add chopped coriander leaves and now remote it from gas

For White Layer

In a pan, add 1 tsp oil and 1 tsp ghee. When it becomes hot, add cumin seeds, hing powder, curry leaves. Then add the 1/3 chopped potatoes and saute for another two minutes.
Add one part of white sabudana and mix well.
Add salt and sugar, 2 tsp roasted peanut powder and lime juice mix well. Remove pan from gas and keep aside.




For Orange Layer

In a pan, add 1 tsp oil and 1 tsp ghee. When it becomes hot, add cumin seeds, hing powder, curry leaves. After they crackle add the 1/3 chopped potatoes and saute for another two minutes.
Add second part of white sabudana and mix well, add salt and sugar, 2 tsp roasted peanut powder, 1 tsp chilli powder, lime juice.
Remove pan from gas and keep aside.

Last step is to take a white platter and arrange the Sabudana Khichdi in tricolour order.
