Dahi vada quick recipe for holi theme kitty party

Dahi vada is a dish of curd and urad daal dumplings. These dumplings are fried and dunked in beaten spiced curd. This dish is also known as dahi bhalla in north india.

Ingredients of vada

Dhuli Urad dal soaked overnight (skinned and split) black gram 400 gms
Salt as per taste
Cumin seeds 2 tsp
Green chillies
1/2 ltr oil for deep fry
Ginger 1/2 spoon grated

Ingredients For dahi

1kg dahi
3tsp sugar
1 tsp Salt
1/2 tsp Black salt
1 tbsp Roasted Cumin Powder
1/2 tsp red chilli powder

For Garnishing

1/2 cup Pomegranate
Green Chutney
Tamarind Chutney

Making of vadas

1) In mixer jar add soaked urad daal, ginger, cumin seeds and salt. Make a thick paste without adding water. Now put the batter into a mixing bowl and beat well using hand beater.
2) Heat oil in a pan for deep fry.
For making dumplings, dip your hand in water and make small spherical dumplings and drop them carefully in hot oil.
3) On low flame fry for two minutes to ensure it is cooked through from within and bring them out when the coir changes to golden yellow. Do not make them brown.

For curd preparation

Beat the curd well and add little water if required. Keep its consistency little thick. Now add salt, sugar, black salt, roasted cumin powder, red chilli powder. And mix well.

Now put vadas in dahi. Before put vadas in dahi soak them in salt water for 5 minutes. And later squeeze them softly to remove water out of it and add them in prepared dahi.

In serving plate place the vadas and dahi over it.
Garnish it with Pomegranate, Green Chutney and Tamarind Chutney.
